Basil Vinaigrette Sauce

Ingredients

  • 40 g Basil, sprig
  • 1 pc Shallot
  • 10 g Dijon mustard
  • 10 g Honey
  • 4 g Salt
  • 50 ml White wine vinegar
  • 150 ml Olive oil

Instructions

    Place basil (leaves only), shallot, mustard, sugar, and salt in a blender.

    Pulse a few times to make a coarse puree.

    Scrape the sauce from the walls with a silicone spatula.

    Add white wine vinegar.

    Slowly add olive oil, blending for 1-2 minutes.

    Once all olive oil is added, turn off the blender and scrape the sauce from the walls again.

    Cover and blend for 1-2 minutes to get a smooth puree.
