Ingredients

40 g Basil, sprig

1 pc Shallot

10 g Dijon mustard

10 g Honey

4 g Salt

50 ml White wine vinegar

150 ml Olive oil
Instructions

1Place basil (leaves only), shallot, mustard, sugar, and salt in a blender.

2Pulse a few times to make a coarse puree.

3Scrape the sauce from the walls with a silicone spatula.

4Add white wine vinegar.

5Slowly add olive oil, blending for 1-2 minutes.

6Once all olive oil is added, turn off the blender and scrape the sauce from the walls again.

7Cover and blend for 1-2 minutes to get a smooth puree.
