400 g Flour

60 g Brown sugar

100 g Greek yogurt

140 ml Milk

10 g Yeast

15 ml Lime juice
Instructions

1Add yeast (10 g) and 1 tsp white sugar to warm milk (140 ml). Let stand for 5-10 minutes for the yeast to activate. In a large bowl, mix flour (400 g), salt (2 g), white sugar (30 g), Greek yogurt (100 g), and egg. Add the activated yeast with milk and knead the dough.

2Knead the dough for 8-10 minutes until soft and elastic. Cover with a towel and leave in a warm place for 1 hour to rise. Once risen, roll out into a rectangle about 0.5 cm thick.

3In a separate bowl, mix brown sugar (60 g) and cinnamon (10 g). Evenly sprinkle the dough with the brown sugar and cinnamon mixture. Carefully roll the dough into a log and cut into pieces 3-4 cm thick.

4Place the cut rolls in a baking pan, cover with a towel, and let rise for 30 minutes.

5Bake in a preheated 180C oven for 20-25 minutes until the cinnabons are golden.

6For the glaze, mix lime juice (15 ml) with an additional portion of white or brown sugar as desired, and drizzle over the finished cinnabons.
