Sweet Potato with Salmon

Ingredients

  • 220 g Sweet potato (or regular potato)
  • 75 g Avocado
  • 150 g Salmon fillet
  • 5 g Oil
  • 7 g Peeled ginger
  • 22 g Orange or lemon pulp
  • 40 g Corn or pickled cucumber
  • to taste Salt, spices, lime juice
  • 27 g Lettuce or arugula for garnish

Instructions

    Bake sweet potato in the oven at 180 degrees for 30-40 min. Slice thinly and place on the bottom of the plate.

    Pan-fry salmon without oil on all sides for up to 12 minutes and place whole on the sweet potato. You can also use raw salmon with wasabi, diced and placed on the sweet potato.

    Add corn (or finely chopped cucumber), salt, spices, lime juice to taste and oil.

    Dice avocado and place in a blender, add oil, salt, pepper, orange pulp, ginger and blend until smooth. Place the mixture on the salmon.
